Chocolate Chip Apple Muffins

A moist and delicious apple muffin with chocolate chips throughout! This is an easy healthy muffin recipe perfect for a yummy fall snack!

Dry ingredients

Wet ingredients

  • 2 eggs room temperature
  • ½ cup + 2 tablespoons oil or melted and cooled butter
  • ½ cup water or milk (I use almond milk)
  • 2 teaspoon vanilla

Add later

  • 1 ½ cups fresh chopped apples
  • ½ cup chocolate chips (use mini if you have them!)

Instructions

  • Preheat + dry ingredients: Preheat the oven to 425 degrees Fahrenheit. In a large bowl mix the dry ingredients - flour, sugar, cinnamon, baking powder, baking soda, and salt. Use a whisk to mix everything well.
  • Mix wet ingredients: In a medium mixing bowl place the eggs, oil (or melted butter), milk, and vanilla. Whisk together until it is well combined.
  • Fold everything together: Chop the apple into small bite-sized pieces. Add the apples, chocolate chips, and flour mixture to the wet mixture. Use a spatula to stir the batter together, about 12-15 folds, just until everything is incorporated. Do not over-stir, this is key for well-risen fluffy muffins.
  • Scoop & bake: Add about ⅓ cup of batter to fill each muffin cup. Place the muffin tin in the preheated oven to bake for 8 minutes, then turn the oven down to 375 degrees Fahrenheit and bake for another 7 minutes. Remove muffins from the oven when they spring back from the touch and when the center does not look gooey.

Sugar: I like to use organic cane sugar, however any white sugar will work.
Oven temperature: If you do not want to change the oven temperature halfway through, bake the muffins at 375 degrees Fahrenheit for 17-19 minutes. However, I recommend baking the muffins how it is written above to get the best rise in the muffin.
Apple peel: I usually leave my apple peel on the muffins when making this recipe, however, if you are making this recipe for a toddler who is still figuring out chewing, or if you desire a more gourmet muffin, peel the apple before chopping it into pieces. Smaller pieces of apple distributed through the muffins better, making each bite super delicious.
Freezing muffins: I like to freeze half my batch of muffins for later in the month! The best way to do this is to wait until they are completely cool and then store them in an airtight container or ziplock bag to keep them fresh. Read more about freezing muffins here.
