Pumpkin Seed Bars
These pumpkin seed bars are a healthy, protein-packed snack perfect for busy families. With immune-boosting antioxidants and great benefits for seed cycling, they offer a nutritious energy boost that’s easy to make.

Preheat the oven to 350 degrees Fahrenheit (175 C).
Place the chia seeds and water together in a bowl, stir together and let sit.
In a medium pot place the honey. Heat the honey on the stove until it is bubbly, turn the stove on low and set a timer for 5 minutes to let it make small bubbles while the timer is going. Then remove the pot from the heat, add the coconut oil, and nut/seed butter to the honey and stir together well. Then let it cool down for a few minutes.
In a food processor or blender, place the pumpkin seeds, oats, pumpkin spice (or cinnamon), and sea salt. Pulse for about 30 seconds until everything looks like coarse sand. Dump this mix into the pot of honey, and add the chia seed mixture and the vanilla. Stir everything together, it will take a bit of work to get everything combined.
Place the granola bar mix into a greased 8x8 pan, and press the mixture down will the back of a measuring cup. Bake at 350 F (175C) for 11 minutes. Let the bars cool and cut into bars. I cut mine 6 rows by 3 rows to make 18 bars. Store in an air-tight container for up to 7 days or keep these bars in the freezer up to 6 months.

When I make these bars I like to use pumpkin seed butter or almond butter but any nut or seed butter can work!
