Super Easy Mango Popsicles

Refreshing and healthy, these super easy mango popsicles are perfect for a summer treat! Use fresh or frozen mango to make these simple 1 ingredient popsicles with your kids!

Ingredients
  

  • 4 ½ cups large chunks of frozen mango, or 3 ½ cups fresh peeled mango chunks
  • 4 strawberries, sliced (optional) (fresh or frozen)

Instructions
 

  • If you are using strawberries and they are frozen strawberries, take them out to thaw now.
  • Using frozen mango: Thaw your mango slightly. Either leave mangoes on the counter for an hour and then drain any liquid, OR place the mangoes in a mesh colander in the sink and pour a full kettle of boiling water over the mangoes. Once the mangoes are soft (it's fine if they are frozen and cold in the middle). Then place the mangoes in the blender and blend the mangoes into a smooth purée.
  • Using fresh mango: Peel and cut your mangoes into chunks. Purée the mango in a blender until smooth.
  • Pour into mold: If using strawberries, place the sliced strawberries into the popsicle mold. Evenly pour the mango puree equally into the popsicle tray. Add the sticks in they aren't in already.
  • Freeze: Place in the freezer for at least 4-8 hours (depending on your freezer it may be longer). Serve and eat cold! Enjoy within 4 months.

Notes

To make them sweeter: The brighter orange the mango is the sweeter the fruit is! If your mango is more pale yellow, add 2 teaspoon of honey or maple syrup to make these popsicles sweeter.
Frozen mango chunk size: If your chunks of frozen mango are small you can use 4 cups instead of 4 ½ cups. I use 4 ½ cups of frozen as there were many air pockets in the measuring cup due to the large chunks.
This recipe makes 8 popsicles. My popsicle mold holds ⅓ cup of liquid for each popsicle. It will depend on the size of your mold for how many mango popsicles it will make for you. 
If you don't have a popsicle mold: use a large ice cube tray, muffin tin with silicone liners or rinsed-out yogurt cups. When the popsicles are partially frozen cover them with tin foil and pop a popsicle stick into place (the tin foil will hold it in the upright position).
