Craving cookie dough? This fast and healthy recipe is made with almond flour and maple syrup. If you love chocolate chip cookies you will love these cookie bars!
Make the cookie dough: Place the almond flour, chopped walnuts, chocolate chips, sea salt, maple syrup, and coconut oil into a bowl. Mix until well combined.
Press into pan: Spread the dough into an 8x8 baking pan and press it into the corners until it's mostly even.
Melt chocolate: In a small pot place the ¾ cupchocolate chips and 1 tablespoon of coconut oil. Place over low heat and stir until completely melted.
Spread the chocolate: Using a large spoon or a spatula spread the melted chocolate over the cookie dough bars. Place the bars into the fridge for 30 minutes and then cut them into bars. Keep these cookie bars in the fridge until serving.

For a thicker dough base double the cookie dough part of the recipe.To make these cookie dough bars dairy-free, be sure to use dairy-free chocolate chips.I recommend using dark chocolate chips, or semi-sweet chocolate chips as milk chocolate chips will make this recipe quite sweet.I like to sprinkle these bars with chunky maldon sea salt.To make bars look pretty with the textured chocolate in the photos, save 2 tablespoons of melted chocolate. After the bars have been in the fridge for about 20 minutes and the chocolate has started to harden, take them out and drizzle the remaining chocolate on top.
