Cookie Dough Bars (Healthy & No Bake)

Edible cookie dough made into bars and covered with melted chocolate chips. Make these cookie bars in 20 minutes, a treat you will be making on repeat!

I remember being 13 years old, impatiently waiting for batch after batch of cookies to bake. When I discovered the magic of no-bake cookie bars this was all I wanted to make! Things to note about ingredients needed:

  • Almond Flour: In the future, I plan to test the recipe with oat flour so this can be more nut-free, I'll let you know how that goes. The almond flour makes these into a higher protein cookie dough.
  • Walnuts: These add an extra crunch to the bars, if you don't want to use walnuts use another chopped nut, or ¼ cup of sunflower seeds!
  • Chocolate chips: I like the texture of having mini chocolate chips in the bars the best but any chocolate chips or chocolate chunks work! I recommend using dark chocolate chips, or semi sweet chocolate chips as milk chocolate chips will make this recipe quite sweet.

Make the cookie dough: Place the almond flour, chopped walnuts, chocolate chips, sea salt, maple syrup, and coconut oil into a bowl. Mix until well combined.

Press into pan: Spread the dough into an 8x8 baking pan and press dough into the corners until it's mostly even.

Melt chocolate: In a small pot place ¾ cup chocolate chips and 1 tablespoon of coconut oil. Place over low heat and stir until completely melted.

Alternatively, melt the chocolate and coconut oil in the microwave in 30-second increments until it's smooth.

Spread the chocolate: Using a large spoon or a spatula spread the melted chocolate over the cookie dough bars.

Place the bars into the fridge for 30 minutes and then cut them into (4x6 or 4x4) bars. Keep these in the fridge until serving.

Optional: To make them look pretty with the texture of chocolate like in the photos, save 2 tablespoons of melted chocolate. After the bars have been in the fridge for about 20 minutes and the chocolate has started to harden, take them out and drizzle the remaining chocolate on top.

Tips from my experience

If you want these cookie bars thick, you can use a smaller pan like a loaf pan. Alternativity double the cookie dough part of the recipe and place in an 8x8 pan.

I like to put mini chocolate chips into the bars so there is lots of chocolate in every bite!

How should I store cookie dough bars?

These bars should stay in the fridge, they will last 7 to 10 days. Or place the no-bake cookie bars in the freezer for up to 6 months, be sure to keep them well wrapped.

Equipment

  • 1 8x8 baking pan

Ingredients
  

cookie dough:

  • 2 ½ cups almond flour
  • ⅓ cup maple syrup
  • ½ teaspoon sea salt
  • ⅓ cup coconut oil
  • ⅓ cup chocolate chips
  • ½ cup chopped walnuts or other nuts

  • ¾ cup semi sweet or dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

For a thicker dough base double the cookie dough part of the recipe.
To make these cookie dough bars dairy-free, be sure to use dairy-free chocolate chips.
I recommend using dark chocolate chips, or semi-sweet chocolate chips as milk chocolate chips will make this recipe quite sweet.
I like to sprinkle these bars with chunky maldon sea salt.

      I don’t have the exact grams for one serving, but the nutrition breakdown was calculated using an online nutrition facts calculator based on the overall recipe. You can adjust the serving size or ingredients there if you'd like more precise info.

      Yes! These can easily be frozen. I would cut them into pieces first and then you could wrap them individually to grab and eat on the go. Or let them thaw for 1 hour before cutting them if you freeze the whole pan. They are delicious frozen too though!!

    Saw this recipe posted on Instagram, immediately went to my kitchen and made it! Love that I am able to find the ingredients already in my cupboard and appreciate the substitute ideas as I did make it with sunflower seeds instead of walnuts. This was an instant hit with me and all my kiddos, they asked for seconds 🙂 So quick and easy to make and had one kid was mesmerized with the zigzag pattern on the top in chocolate, absolutely love the extra detail information and tips in your patterns like this one 🙂
