Healthy Edible Chocolate Chip Dough

As a mom and a nutritionist, this is the cookie dough my kids and I eat straight from the bowl. With nutrient-dense ingredients like buckwheat and nut butter, sweetened with honey, and a tad of butter to make the classic chocolate chip cookie taste come through - you are gonna be licking the bowl just like me.

  • Place the buckwheat groats or rolled oats into a blender and blend for about 1 minute until you get a fine powder. Set aside.
  • In a mixer, place the soft butter, nut butter, honey, and vanilla. On medium speed, mix everything together until well creamed.
  • To the mixing bowl add the ground buckwheat, sea salt, and chocolate chips. Mix on medium speed until a thick, soft dough forms. Eat with a spoon or roll into balls. Store in the fridge for up to 10 days.

Notes

This recipe is gluten-free. Buckwheat groats are a seed that can be eaten raw.

How long will this dough last in the freezer? 
This edible cookie dough will last up to 6 months in the freezer. After that, it won't go bad, but the taste may start to alter. 
Can you bake this cookie dough into cookies? 
I've never tried to bake this recipe; it was made to be eaten as dough with all edible ingredients.
