Pineapple Celery Smoothie

Here's the full recipe to make the best pineapple celery smoothie! This makes a sweet tangy green smoothie. It is refreshing and perfect to rehydrate.

  • 1-3 stalks celery
  • 1 apple chopped
  • 1 handful spinach
  • 1 tablespoon lemon juice
  • ¼ cup fresh mint (a small handful)
  • 1 cup coconut water
  • 2 cups frozen pineapple

Instructions

  • Place 1 celery stalk, a chopped apple, spinach, lemon juice, and mint in the blender. Then add coconut water and chia seeds if using. Place the pineapple on top.
  • Blend until completely smooth. Taste and add 1-2 more stalks of celery as desired. Pour into glasses and enjoy.
  • Any leftover smoothie can be stored in a mason jar or any airtight container in the fridge and consumed within the next 24 hours.

Notes

Coconut water: If you do not have coconut water, use regular water.
Optional additions: 
    • Protein Boost: Add 1 tablespoon of protein powder or 1 tablespoon of hemp hearts.
    • Energy Boost: Add 1 tablespoon of chia seeds
    • Super food: Add ½ teaspoon of turmeric.
    • Sweeter Please!: Add 1-2 tablespoons of honey depending on your desired sweetness.
