I've been making healthy cookies for over 15 years, and this is one of my family's favourites because it doubles as both a healthy breakfast and an easy snack. It's a perfect way to use up an overripe banana and sneak in extra fiber.

Helpful notes about ingredients needed:
- Flour: Whole wheat flour or white flour can be used.
- Oats: Rolled oats or quick oats can be used.
- Olive oil: Any oil can be used. I like using olive oil.
- Bananas: Overripe bananas will add more sweetness. This is a great recipe to use up any brown bananas! Here's how to ripen your bananas further to be sweeter.
- If you don't like raisins: Use dried cranberries, dried apricot chunks, or more chocolate chips instead!
- Sunflower seeds: These can be swapped out for a mixture of other seeds or nuts! Like pumpkin seeds, sesame seeds, flax seeds, chopped walnuts, or chopped pecans! Any of these would taste great in these breakfast seed cookies!
- Hemp hearts: Optional, but great if you desire to add additional protein to the cookies!

Bananas are a good source of B6 and vitamin C. They contain tryptophan, an amino acid, which the body converts to serotonin, making us feel relaxed and joyful.
Instructions for healthy banana and oat cookies

1. Preheat the oven to 350 degrees F.
Place the oats, flour, sunflower seeds, chocolate chips, raisins, sea salt, baking soda, and hemp hearts (optional) in a mixing bowl.

2. Stir everything together super well. I like to use a fork or a big whisk for this.

3. In a small bowl, mash the banana, then add the olive oil, cane sugar, and eggs.

4. Whisk everything together well with a fork.

5. Now dump the wet ingredients into the dry mixture and stir until well mixed. Using a large ice cream scoop or a ⅓ cup measuring cup, form cookies and place them on the cookie sheet.

6. Bake the cookies for 10-12 minutes at 350°F (175 °C) until the edges are turning brown.
Tips from my experience
Use a large ice cream scoop if you have one; this makes the banana everything cookies uniform and super pretty. I used a ⅓ cup scoop. Or use a measuring cup.
Don't overbake these banana oat cookies! These will look slightly soft still when you take them out of the oven. As they cool on the pan, they will solidify.
Swap the sunflower seeds and raisins for your favorite mix of dried fruit, seeds, or nuts to make cookies you love!
How do you store banana breakfast cookies?
If we plan to eat these cookies within 4-5 days, I store these jumbo breakfast cookies in a sealed container at room temperature. Otherwise, I pop them into a plastic bag or sealing container for the freezer, and they will last up to 6 months.

Dry Ingredients
- 2 cups quick oats or rolled oats
- ½ cup whole wheat flour
- ⅓ cup sunflower seeds
- ⅓ cup chocolate chips
- ½ cup raisins
- ¼ teaspoon sea salt
- 1 teaspoon baking soda
- ¼ cup hemp hearts (optional)
Wet Ingredients
- 1 cup mashed banana about 2 medium bananas
- 2 eggs
- 2 tablespoon honey or cane sugar
- ¼ cup olive oil
Instructions
- Preheat the oven to 350 Fahrenheit (175 °C). In a medium bowl, place the oats, flour, sunflower seeds, chocolate chips, raisins, sea salt, baking soda, and hemp hearts. Mix together well.
- Place the mashed banana, eggs, honey (or cane sugar), and olive oil in a small bowl and mix together well. Add this mixture to the oat mixture. Mix well. Use a ⅓ cup ice cream scoop or measuring cup and place the batter on cookie sheets, slightly pressing them down on the cookie sheet.
- Bake giant cookies for 10-12 minutes at 350 Fahrenheit (175 °C) until they are almost golden looking on the edges. Let them cool, and enjoy!
