A healthy jumbo cookie featuring mashed bananas, oatmeal, chocolate chips, raisins, and sunflower seeds making a filling cookie! These cookies are giant and delicious!

I've been making healthy cookies for over 15 years, this includes recipes like oatmeal cookies without eggs, brownie almond flour cookies, and my favorite olive oil chocolate chip cookies!

Ingredients needed

Here's what you need to make these huge delicious cookies! See below for ingredient swaps and alterations you can make.

Helpful notes about ingredients needed:

  • Flour: Whole wheat or white flour can be used.
  • Oats: Rolled oats or quick oats can be used.
  • Olive oil: Any oil can be used. I like using olive oil.
  • If you don't like raisins: Use dried cranberries, dried apricot chunks, or more chocolate chips instead! 
  • Sunflower seeds: These can be swapped out for a mixture of other seeds or nuts! Like pumpkin seeds, sesame seeds, flax seeds, chopped walnuts, or chopped pecans!
  • Hemp hearts: Optional, but great if you desire to add additional protein to the cookies!

I like to share simple insights from my schooling in Holistic Nutrition. Let's chat about how these jumbo oatmeal breakfast cookies will support you!

Fiber: The oats, whole wheat flour, and seeds all contain good amounts of fiber supporting your intestinal tract and blood sugar levels.

Bananas are a good source of B6 and vitamin C. They contain tryptophan, an amino acid, which the body converts to serotonin making us feel relaxed and joyful.

Instructions for healthy jumbo cookies

Since you can't be in my kitchen baking with me, the next best thing is following along with these photos from my kitchen. Scroll down to see the recipe card for exact ingredient details.

Preheat the oven to 350 degrees F.

Place the oats, flour, sunflower seeds, chocolate chips, raisins, sea salt, baking soda, and hemp hearts (optional) in a mixing bowl.

Stir everything together super well. I like to use a fork or big whisk for this.

In a small bowl mash the banana, then add the olive oil, cane sugar, and eggs.

Now dump the wet ingredients into the dry mixture and stir until well mixture. Using a large ice cream scoop or a ⅓ cup measuring cup form cookies and place them on the cookie sheet.

Bake the cookies for 10-12 minutes at 350 F until the edges are turning brown.

Tips from my experience

Use a large ice cream scoop if you have one, this makes the banana everything cookies uniform and super pretty. I used a ⅓ cup scoop. Or use a measuring cup.

Don't overbake these cookies! These will look slightly soft still when you take them out of the oven. As they cool on the pan they will cool and solidify.

Swap the sunflower seeds and raisins for your favorite mix of dried fruit, seeds, or nuts to make cookies you love!

How do you store banana breakfast cookies?

If we plan to eat these cookies within 4-5 days I store these jumbo breakfast cookies in a sealed container at room temperature. Otherwise, I pop them into a plastic bag or sealing container for the freezer and they will last up to 6 months.

A big healthy banana cookie! These jumbo breakfast cookies are filled with sunflower seeds, raisins, and chocolate chips. They are filling and the perfect on-the-go energizing cookie.

Ingredients
  

Dry Ingredients

  • 2 cups quick oats or rolled oats
  • ½ cup whole wheat flour
  • ⅓ cup sunflower seeds
  • ⅓ cup chocolate chips
  • ½ cup raisins
  • ¼ teaspoon sea salt
  • 1 teaspoon baking soda
  • ¼ cup hemp hearts (optional)

Wet Ingredients

  • 1 cup mashed banana about 2 medium bananas
  • 2 eggs
  • 2 tablespoon honey or cane sugar
  • ¼ cup olive oil

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl place the oats, flour, sunflower seeds, chocolate chips, raisins, sea salt, baking soda, and hemp hearts. Mix together well.
  • Place the mashed banana, eggs, honey (or cane sugar), and olive oil in a small bowl and mix together well. Add this mixture to the oat mixture.
    Mix well. Use a ⅓ cup ice cream scoop or measuring cup and place the batter on cookie sheets, slightly press them down on the cookie sheet. 
  • Bake giant cookies for 10-12 minutes at 350F until they are almost golden looking on the edges. 

Notes

Makes 16 regular-size cookies bake for 8-10 minutes.

    These hearty breakfast cookies pack the punch! I made them to serve my hard working husband and his colleague on the weekend. They were a perfect blend to jumpstart the weekend project. I substituted pumpkin seeds for the sesame seeds because that is what I had in hand. Delicious and hearty!
