How to Make the Best Homemade Almond Butter

This simple homemade almond butter recipe is an easy and affordable method to make your own nut butter. Being high in protein, snacks with almond butter offer a constant stream of energy. Next, make your own pumpkin seed butter!!

Ingredients For Homemade Almond Butter

This homemade recipe is only made with one key ingredient: almonds.

When runny liquids are added (like coconut oil, vanilla, maple syrup, or honey) it can make the butter seize becoming hard to spread. Cinnamon or sea salt is fine to add.

We will roast the almonds for this recipe to release natural oils making it easier to make into almond butter than if using raw almonds.

How much almond butter will three cups of almonds make?

3 cups of almonds is equivalent to 1lb of raw almonds, making 2 cups of almond butter or 16 ounces.

3 cups of almonds will fit well into a 12-cup food processor. When making more than 3 cups of almond butter you will want a 16-cup food processor or make it in a blender with a large container.

Should I make almond butter in a food processor or Vitamix blender?

I tested this recipe in my Vitamix and my food processor. I liked making it in my food processor more as there was little to no scraping down the sides of the machine needed. Alternatively, you can use any high-speed blender.

Food Processor:

  • It took about 12 minutes.
  • I used a 16-cup food processor but a 12-cup will work too!

Vitamix:

  • If you want to make more than 3 cups of almonds it's better to use the blender.
  • If you have the wide base vitamix container make at least 3 cup of whole almonds so you do not need to scrap down the sides constantly.
  • It took about 10 minutes. See photo below of my almond butter made in the Vitamix.

Instructions for Homemade Almond Butter

Follow these step-by-step photos showing the processing of fresh almond butter in my kitchen to make your very own almond butter!

Roast & Cool: Start by roasting whole almonds for about 10 minutes on parchment paper or a silicone-covered baking sheet, this releases all the oils to make it turn into creamy almond butter. By roasting the almond adding other oils is not needed.

You can make raw almond butter from unroasted almonds but they will need to be blended closer to 17 minutes.

When the warm almonds have cooled down place them in the food processor container and secure the lid.

Start the machine. Note that you are going to have the machine on for about 12 minutes.

When you first start processing you will get almond flour after 20-30 seconds.

After 3 minutes of processing, it will be fine crumbs.

Almonds blended into thick dough after 9 minutes in the food processor.

After 9 minutes of processing, it starts to become like a crumbly dough.

Whole blended in the cuisnart food processor after 10 minutes.

After 10 minutes of blending, it becomes a dough ball.

After 11 minutes of blending, it becomes a thick paste.

After 12 minutes of processing it becomes a smooth and creamy texture. Now add optional ingredients like a pinch of salt or any of the ingredients listed below for a flavor variation.

When it becomes runny and drippy it's done! You've made perfect almond butter. Store it in a mason jar or any sealing glass jar.

Hint: The time may vary from 10-17 minutes depending on the machine you are using, keep an eye on it, after blending long enough it will create runny almond butter!

To Make Crunchy Almond Butter

Save ½ cup of the roasted almonds, add these when the almond butter is starting to look more liquidy at about 11 minutes. Blend for another 30 seconds to 1 minute until they become small pieces.

Almond Butter Flavor Variations

Add these ingredients as a delicious way to personalize your very own almond butter. They should be added in for the last minute or 2 of blending.

  • Salted Caramel: Add ½ teaspoon of sea salt and 3 tablespoons of coconut sugar.
  • Cinnamon Almond Butter: Add 1 ½ teaspoons of cinnamon.
  • Chocolate Almond Butter: Add 2 tablespoons of cocoa powder, and 1 tablespoon of coconut sugar (or cane sugar).

Nutrition Of Almond Butter Vs Peanut Butter

Nutritionally almonds are higher in minerals and vitamins, they are higher in healthy fats and contain more fiber. However, peanuts have slightly more protein.

Almond Butter:

Almond butter is commonly sold as a one-ingredient product, therefore this is a great alternative to conventional peanut butter.

If you are allergic to peanut butter (like me!) almond butter is a great alternative.

Peanut Butter:

Store-bought peanut butter commonly has many additives that are not supporting your well being such as palm oil (which is not good for your body or the environment) and sugar.

When buying peanut butter look for natural peanut butter that is the best alternative. Or make your own homemade peanut butter!

How long does almond butter last in the fridge?

Homemade almond butter will last in the fridge for two weeks. It will last longer if you use a sealed jar and no crumbs contaminate it.

Fridge: Almond butter will harden in the fridge but when it's brought to room temperature it will become spreadable again. Let it sit for 10-15 minutes to become soft enough to spread.

Room Temperature: If you are gonna use your homemade almond butter within a week, you can leave it at room temperature. It can become rancid easily if it is left at room temperature changing the texture and taste.

Store-bought almond butter can last up to 9 months in the fridge.

Is homemade almond butter cheaper?

Homemade almond butter is usually cheaper, but it depends! The best price for store-bought almond butter I find is Costco Kirkland almond butter it's $12 for 27 ounces however, it is $14 at the Real Canadian Superstore for the same size.

Buying three cups of almonds is the only cost for this recipe, so this homemade version is about $5.50 for 16 ounces (almonds from Costco), meaning it would be $11 for 32 ounces - a lot cheaper! However, buying almonds in small quantities (bulk almonds are cheaper), and buying organic or raw almonds will be more expensive.

Instructions
 

  • Roast & Cool: Preheat the oven to 350 F. On a parchment paper or a silcone covered baking sheet roast the whole almonds for about 10 minutes in the oven. Let the almonds cool down, about 10 minutes.
  • Process: When the warm almonds have cooled, place them in the food processor container and secure the lid. Start the machine. Process for 7 minutes, then stop to scrape down the sides. Keep processing for about another 5.
  • Smoothie & Creamy: Scroll up to see photos of what the almond butter looks like at different stages of processing. After about 12 minutes of processing the almonds will become a runny and creamy texture, if it is still thick keep processing or blending.
  • Storage: When it becomes runny and drippy if you choose, you can add ¼ teaspoon of salt for flavor. It is now ready! Store it in a mason jar or any sealing glass jar, keep it in the fridge and enjoy within 2 weeks to a month.
