These herbal tea popsicles are made with raspberries and sweetened with honey. Camomile, mint, or any herbal tea can be used to make these icy popsicles. They are extremely refreshing!
I wanted a simple refreshing popsicle that would be easy to make with very few ingredients in the house, something full of fruity notes. I used camomile tea which made these flowery tasting and very calming. Next, try my other favourite raspberry popsicles made with rhubarb and yogurt!

What tea is in your backyard or garden?
Recently I was visiting a friend who grows camomile flowers, she was drying some the day I visited.
I wasn't a huge fan of camomile previously however, when I saw it come out of the garden my thoughts on the whole tea really changed, and I enjoy it now. Camomile tea is very relaxing. I left my friend's home and created this healthy red popsicle from that inspiration!
What tea are you growing in your garden that can be used? Lemon balm, mint, camomile, rose hips, and elderberries would all be delicious! I'm growing lemon balm for the first time this year and plan to use it for my next batch of popsicles!
Another thing you can do is add edible flowers to these popsicles to make them even prettier!

Notes you should know about the ingredients
- Tea: Any loose tea or tea bags can be used for this recipe. I used camomile however, mint, rooibos, any flower or fruit tea works well.
- Consider using a tea that supports your nutritional needs at this time, if you are pregnant use raspberry leaf tea, if you are breastfeeding use fennel tea.
- Raspberries: Use frozen or fresh raspberries to make these popsicles.
- Honey: If you don't want to use honey use cane sugar instead, be sure it dissolves.
How to make herbal tea popsicles
Follow these step-by-step photos from my kitchen to make camomile tea popsicles!
Place the honey and the tea in a large bowl. Pour boiling water overtop. Stir until the honey is dissolved. Let the tea sit for 10 minutes to steep. Then remove the loose tea or tea bags from the hot tea.
While the tea steeps, distribute the raspberries between the popsicle molds.
Using a measuring cup pour the herbal tea into the popsicle mold.
Place the popsicle sticks into the popsicle mold. Place the mold into the freezer for 8 hours or overnight until everything is fully frozen.
After the popsicles are fully frozen, remove them from the molds and enjoy. I find it works best to remove all the popsicles at once and place them in a plastic bag to easily grab from the freezer.

Camomile popsicles

Ingredients
- 5 tea bags or 5 teaspoons loose tea (camomile, raspberry leaf, mint, fennel)
- 3 cups hot water
- ½ cup honey
- 1 cup raspberries fresh or frozen
Instructions
- In a large, measuring cup or bowl, place the tea, hot water and honey. Stir the tea to dissolve the honey. Then let the tea steep for 10 to 15 minutes. Remove the teabags, or (strain the loose tea).
- Distribute the raspberries in the popsicle mould. Pour the tea over the raspberries and insert the lid or the popsicle sticks. Freeze for 8 to 12 hours.
